The vineyards
Through our two estates, we directly cultivate over 200 hectares of vineyards located in the provinces of Treviso and Pordenone.
This is a region with a rich winemaking heritage, with a soil and climate that are ideal for producing grapes of exceptional quality. This provides us with excellent raw materials, which we process with respect for their inherent natural quality, enhancing it throughout the production process.
Winemaking
The quality of the grapes is guaranteed from the earliest stages, using modern equipment and technologies that allow the grapes to be processed in a way that preserves their organoleptic qualities, which are protected by temperature control from the earliest stages of processing, always in synergy with the vigilant and attentive work of our highly qualified staff.
Upon request, we create customised products, with the option to select the most suitable grapes which we can vinify according to the guidelines provided by the client.
Sparkling wine production and other processes
Thanks to our sparkling wine facility, we can provide third-party sparkling wine production services and the direct sale of sparkling and semi-sparkling wines, and can also arrange logistics for the delivery of wine by tanker.
For a product tailored to your needs, we can supply:
- raw wine on fine lees, stored at a controlled temperature;
- sparkling wine base ready for pressurised tank (clarified from unstable proteins and filtered or centrifuged);
- ‘bottle-ready’ wine stabilised for proteins and tartrates;
- ‘bottle-ready’ sparkling and semi-sparkling wine stabilised for proteins and tartrates.
- For still, semi-sparkling and sparkling wines suitable for DOC and DOCG we can supply the certified product directly.
Quality control
Each vat of wine is monitored at every stage of production, thanks to our internal laboratory for chemical and organoleptic analysis. Here we determine the main analytical parameters of grapes, must and wine by monitoring fermentations, storage and secondary fermentation. The main chemical parameters we determine are: alcohol content, glucose and fructose, total sugars, total and volatile acidity, organic acids, total and free sulphur dioxide, colour intensity, polyphenols, and copper extracts. For more complex analyses, such as checking for the presence of pesticide residue and heavy metals, we rely on accredited external laboratories that carry out checks on all batches.
